Shahi Badami Qorma
Ingredients
Ingredients for Shahi Badmani Chicken Korma: - Chicken- 1 KG - Oil- 1 cup - Onion- 3 medium size - Dahi- 2 cups Whole garam masala/ spices: - Green cardamom- 3 - Cloves- 3 - Black cardamom- 2 - Cinnamon- half stick - Bay leaves- 2 - Peppercorns- 10 - Salt- as per your Taste - Red Chilli powder- 1 Tsbp - Coriander powder- 1 Tsbp - Javitri/Mace powder- 1/4 Tsp - Jaiphal/ Nutmeg Powder- 1/4 Tsp - Garam masala powder- 1/2 Tsp - Almonds Grounded- 10-12 nuts - Kewra- 1 Tsp Step by Step Process: - Bring Almonds - Chop the onions and fry it - Blend with Yogurt - Wash and drain the chicken pieces, set aside. - Chop the coriander leaves. - Mix the turmeric powder, Chilli powder, coriander powder with 1/2 cup of water. Keep aside. - Process: - Heat oil and add the whole garam masalas and bay leaves. Stir it and add the chopped onions. Fry for around 7-8 mins on medium heat till the onion starts changing colour. - Add the ginger garlic paste and fry for around 2 mins till raw smell is gone. - Now add the powders mix and fry it for 2 mins on medium heat. - Add in the chicken pieces and mix it well. Fry for 5 mins on high heat. - Add salt to taste. - Add the Jaiphal and Javitri powders. - “Bhuno” the chicken on medium heat for around 7-8 mins. - Now lower the heat and add the whisked curd. Mix well and continue to stir. - Now increase heat to medium and continue to cook for another 3 mins till oil separates. - Add a cup of water, mix and cover & cook for 10 mins. - Remove cover and add the cashew nut paste and the garam masala powder, mix well and cover & cook for 10 mins. - Garnish with chopped coriander leaves. #Korma #ChickenKorma #ShahiKorma #BadamiKorma
