INGREDIENTS:
- Potatoes: 4 medium size, boiled and peeled
- Salt: As per your taste
- Coriander Seeds Crushed: 1 Tsp
- Red Crushed Chili: 1/2 Tsp
- Black Pepper Crushed: 1/2 Tsp
- Dried Oregano: 1/2 Tsp
- Garlic Powder: 1/2 Tsp
- Cornflour: 1 Tbsp
- Breadcrumbs as needed
- Mozzarella Cheese: 10-12 Cubes
- Oil for Frying
- Cornflour: 2 Tbsp
- All Purpose Flour: 2 Tbsp
- Black Pepper: 1/2 Tsp
- Salt: 1/4 Tsp
- 1/3 cup water (add more or less depending on the mixture)
- In a big bowl mash potatoes with a fork. Once mashed add seasonings salt, black pepper, red chili, cheddar cheese, sweet corn, coriander seeds, coriander leaves, dried oregano and cornflour.
- Mix everything well. Check the taste and add more salt or black pepper if required.
- Take about one tablespoon of the potato mixture and shape it into a ball then flatten it.
- In the center add some grated mozzarella cheese and carefully close it into a ball.
- Repeat the process with the rest of the potato mixture.
Prepare batter:
- In a small bowl add cornflour, all purpose flour and gradually add water.
- With the help of a spoon mix everything into a neither too thick nor too thin batter.
- Make sure there is no lumps.
Assemble:
- Dip each potato ball first in the batter and then roll into the breadcrumbs making sure it's all covered.
- Before frying place the balls in the freezer for at least one hour, deep frying to prevent cheese from oozing out.
- Heat oil, once the oil is ready slide the cheese balls gently into the hot oil and fry on medium heat.
- Once one side turns golden, turn the balls with a slotted spoon.
- Turn again a couple of time more to get an even golden colour.
- Once golden brown remove from the oil and transfer onto a paper towel to remove the excess oil.
- Serve warm with sweet chili sauce or ketchup!
